Celebration Cake
What kind of cake would Miro's favorite cake be? Chocolat--or chocolate--of course!
Celebration Cake
2 cups sifted cake flour
1 cup sugar
1 cup cocoa
2 teaspoons baking soda
1 teaspoon salt
2 large eggs at room temperature
2 teaspoon vanilla
1/2 cup vegetable oil
1 cup buttermilk
2 tablespoon white vinegar
1 cup boiling water*
2 cups of your favorite frosting (Miro likes vanilla)
1/2 cup raspberries (optional)
*Have an adult help you boil the water and use the hot oven.
1. Preheat oven to 350 degrees F*. Grease and lightly flour two 9" cake pans or line 24 cupcake molds with paper liners.
2. Sift together all dry ingredients (flour, sugar, cocoa, baking soda, salt) into a large bowl.
3. Whisk together eggs, vanilla, oil, and milk in a small bowl.
4. Make a small well in dry ingredients. Fill well with egg mixture. Using a spatula or spoon, slowly incorporate egg mixture into dry
ingredients. Add vinegar and mix well.
5. When batter is almost smooth, have an adult help you pour hot water into batter, stirring as you pour.
6. Carefully pour batter into cake pans. Bake on center rack for 20-25 minutes. The cake is done when a toothpick inserted into the middle comes out almost clean.
7. Leave cake in pan to cool on rack for 15 minutes.
8. Remove from pan and cool completely.
9. Frost cake after it cools.
10. Decorate top of cake with raspberries.
