Ful Mudammas: An Egyptian Breakfast
What You'll Need:
- 1 tablespoon olive oil
- 1 15-oz. can of fava beans
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 tomato, chopped
- 1/2 teaspoon cumin
- 1/2 teaspoon curry powder
- 1/2 teaspoon cinnamon
- salt, to taste
- dash of cayenne pepper (optional)
- 1 tablespoon lemon juice
What to Do:
- With an adult's help, heat olive oil in a large skillet over medium-high heat. Add onions and cook for about five minutes, stirring occasionally. Add garlic and stir for about 30 seconds.
- Stir in cumin, curry powder, cinnamon, salt, and pepper. Add tomato and cook until it begins to break apart.
- Add fava beans to the skillet. Turn heat to low and simmer for about 15 minutes. You can leave the beans whole or mash them up with a fork or potato masher. In the last few minutes of cooking, add lemon juice.
- If you'd like, sprinkle the beans with your favorite cheese and serve with bread.
