Ful Mudammas: An Egyptian Breakfast

What You'll Need:

  • 1 tablespoon olive oil
  • 1 15-oz. can of fava beans
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tomato, chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon cinnamon
  • salt, to taste
  • dash of cayenne pepper (optional)
  • 1 tablespoon lemon juice

What to Do:

  1. With an adult's help, heat olive oil in a large skillet over medium-high heat. Add onions and cook for about five minutes, stirring occasionally. Add garlic and stir for about 30 seconds.
  2. Stir in cumin, curry powder, cinnamon, salt, and pepper. Add tomato and cook until it begins to break apart.
  3. Add fava beans to the skillet. Turn heat to low and simmer for about 15 minutes. You can leave the beans whole or mash them up with a fork or potato masher. In the last few minutes of cooking, add lemon juice.
  4. If you'd like, sprinkle the beans with your favorite cheese and serve with bread.
